Sesame roasted nicola potatoes

Nicola potatoes are long to oval shape and have a sweet nutty taste. Combined simply with sesame oil and fresh rosemary this is a simple and delicious addition to your meal. If you want to cut the potatoes ahead of time you can cover them in water till required.

Ingredients

  • 6 nicola potatoes – peeled, rinsed, sliced in quarters, cut into 4 portions
  • 2 sprigs of fresh rosemary – rinsed, remove leaves, discard stem, diced
  • 3 tablespoons of sesame oil

Directions

  1. Preheat fan-forced oven to 180C / 356F.
  2. Prepare potatoes and rosemary.
  3. In a large bowl add potatoes, rosemary and sesame oil.
  4. Mix to combine and coat.
  5. Add potato mix to an oven proof baking dish and place in oven.
  6. Cook potatoes for 50 minutes.   Every 15 minutes agitate pan to move potatoes around or turn with a spatula.
  7. Place in serving dish and serve immediately.
