Bite size cashew spread wraps

These wraps are great as a starter for a dinner party or a treat for the family.  It is light and satisfying so it is perfect to keep the hungry guests or family at peace.  You can use any type of wrap to your taste we have used spelt wraps.  You may want to vary the amount for a thicker spread.  Or if there is spread left over it can be served with carrot or celery sticks.

Ingredients

  • 1 1/2 cups cashew – cover with water and soak for 1 hr
  • 3 tablespoons sesame seeds – toast in a pan till golden
  • 4 tablespoons lemon juice
  • 1 teaspoon balsamic vinegar
  • 1 clove garlic – peeled, rinsed, crushed
  • 3 tablespoons parsley – washed, finely sliced
  • 1 tablespoon dry thyme
  • 4 wraps – pictured spelt wraps

Directions

  1. Soak cashews for 1 hour.
  2. Prepare sesame seeds by toasting in a pan on medium heat rotating constantly till golden.
  3. Add all prepared ingredients into a food processor or blender.  Combine until a smooth spread is formed.
  4. Lay out one wrap and place 2 tablespoons of spread on wrap.  Spread evenly to cover entire wrap.
  5. Roll the wrap in 3cm / 1¼in wide rolls wrapping the spread on the inside.
  6. Cut rolled wrap to approximately 5cm / 2in lengths and place on a serving dish.  Repeat and serve.
