Cheesy loaf dip

A very rich dish that we make on special occasions as a pre-dinner nibble.  It is also great for a casual get together where finger food is served.  Be warned though, this dish is filled with all sorts of goodies combined to make an irresistible dish.  Problem is, you need a lot of will power with this as you will not want to stop eating it!  When the dip is about quarter left start to break off loaf crusts and eat with the dip.

Ingredients

  • 380g / 13oz can crab meat – drain
  • 380g / 13oz can salmon – drain, remove any bones
  • 1 small onion – peeled, rinsed, finely diced
  • 1 cup Philadelphia cream cheese – diced
  • 2 cups tasty cheese – grated
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon curry
  • 1 large round deep loaf – pictured damper
  • 1 packet of plain crackers

Directions

  1. Prepare crab, salmon, onion, cream cheese and tasty cheese.
  2. Preheat fan-forced oven to 180C / 356F.
  3. In a large pot add cheeses, sour cream and mayonnaise, followed by the remaining ingredients except the curry.
  4. Place pot on a medium heat for 5 minutes mixing occasionally to melt and combine.
  5. Add curry, mixing to combine for a further 5 minutes.
  6. Place loaf on an oven proof dish and slice top off loaf.  Cut loaf top into slices and place on the side of a serving dish.
  7. Cut a round circle close to the crust on the inside of the loaf, remove bread inside.  Cut removed bread into small pieces and place on side of serving dish.
  8. When mixture is melted, pour into loaf and place into preheated oven for 20 minutes.
  9. Place on serving dish with crusts, removed bread and crackers.  Serve.
