Fresh fruit salad

Nothing like a fruit salad to clean the palate with freshness. We like to combine fruits that hold themselves over time so it can be stored in the fridge for use over a couple of days to make it great for a quick breakfast, snack or dessert. If not all ingredients are available substitute with other fruit, increase quantity of available fruit, or add your favourites. A handy tip is to add fruit when we are about to eat the fruit salad like banana, which would otherwise go brown over time.

Ingredients

  • 2 cups watermelon – hulled, diced small
  • 2 cups grapes – washed, halved if large
  • 1 cup rockmelon – hulled, deseeded, diced small
  • 1 cup blueberries – washed
  • 3 kiwi fruits – skins removed, diced small
  • 1 cup raspberries – washed, halved
  • 2 cups strawberries – leaves removed, sliced in quarters
  • 1/2 cup fresh orange juice – approximately 1 large orange
  • 2 passion fruits – pulp and seeds only

Directions

  1. Prepare the fruit and add into a large serving bowl.
  2. Squeeze the orange juice and in a container add the pulp and seeds of the passion fruit mixing well.
  3. Add the juice to the fruit and mix well.  Serve or store in an airtight container in the fridge.
