Super easy purple cabbage with dijon dressing

The humble cabbage gets a boost with the purple cabbage variety.  Simple yet tasty with the addition of Dijon mustard.  This dish is sure to brighten up your plate.

Ingredients

  • 1/2 small purple cabbage – washed, sliced, diced roughly or grated
  • 1 teaspoon Dijon mustard
  • 1/2 lemon – juiced
  • 2 tablespoons olive oil

Directions

  1. Prepare cabbage and add to a serving bowl.
  2. Mix mustard, lemon and oil in a small container and whisk.
  3. Add to cabbage to coat.  Serve.
