Rocket, walnut & pear with a honey balsamic dressing

Easy, tasty and crunchy is this lovely fresh rocket salad.  We love the combination of the honey in the dressing which tones down the bitterness of the rocket.  While the pear and walnuts combine for a nice crunchy surprise.

Ingredients

  • 5 cups wild rocket – washed
  • 1 cup walnuts – chopped roughly
  • 1 pear – washed, sliced thinly
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons virgin olive oil
  • 1 tablespoon honey

Directions

  1. Prepare rocket, walnut and pear.
  2. Prepare dressing by combining in a small bowl vinegar, oil and honey.
  3. In a large serving bowl add rocket and drizzle dressing over and lightly toss.
  4. Add walnuts and pear on top.  Serve.
