Almond & date slice

Everyone likes a little sweet snack here and there so why not try these easy to make sugar free alternatives. Made with almonds, the sweetness of dates and with a touch of chia and sesame seeds leaves you guilt free. You can store these in the fridge in an airtight container, we like to separate the layers with grease proof paper.

Ingredients

  • cup dates – pitted
  • 2 tablespoons coconut oil – melt gently if solid in small pot over low heat
  • 1 cup almonds – soaked for at least 5hrs in water or overnight
  • 1 tablespoon chia seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoon olive oil

Directions

  1. Soak almonds. Discard water after soaking.
  2. Prepare dates and coconut oil. 
  3. In a food processor or blender add dates, coconut oil and almonds.  Pulse for a 10 times then blend until ingredients are like breadcrumbs for approximately 1 minute.
  4. Turn out in a small bowl and add chia and sesame seeds.  Mix well to distribute seeds throughout mixture.
  5. Cut grease proof paper to overlap 20cm / 8in square dish.  Add olive oil and with a small piece of grease proof paper spread the oil over the top of the paper.
  6. Turn out mixture on top of grease proof paper in dish and push ingredients down to cover the dish making sure to keep the mixture even.  Push down with hands.
  7. Place overlapping grease proof paper over the mixture. Turn out mixture on a chopping board with paper in tack.  With a rolling pin roll slightly to even out further.
  8. Remove paper and cut into slices roughly 5 strips length wise and 4 strips width wise or to desired size.
  9. Place slices on a freezer proof tray and freeze for 1 hour.  Serve and store remainder in an airtight container in the fridge.
