Gourmet salad with marinated vegetables

With this salad you don’t even need a dressing as the marinade from the jars make a good one. Make sure to use good quality sun-dried tomatoes, chargrilled capsicums and olives to make this an easy and tasty salad.

Ingredients

  • 2 cups of mixed baby leaf salad – washed, drained
  • 1/4 cup strip sun-dried tomatoes bottled – or if whole sliced finely
  • 2 whole marinated capsicums bottled – sliced finely
  • 12 mixed olives

Directions

  1. Prepare salad leaves.  Slice tomatoes and capsicums.
  2. In a serving plate add the salad leaves, scatter tomatoes, capsicum and olives.  Do not drain marinade and add a little of the marinade from the jars to the salad.
  3. Mix lightly and serve.
