A simple dish which infuses the taste of bacon through the chicken to make it tender. Add this quick dish to any of your favourite vegetables and you have a low fuss meal. We have roasted vegetables as an accompaniment. Simply preparing the vegetables in small pieces and place into the oven 15 minutes ahead of the chicken.
Ingredients
- 8 chicken thigh fillets
- 8 slices short cut bacon – rind removed
- 16 tooth picks
- 1 tablespoon olive oil
Directions
- Preheat fan-forced oven to 180C / 356F.
- Prepare bacon.
- On the inside of the thigh fillet add one bacon slice.
- Cut each chicken thigh fillet in half, length wise.
- Gently roll each fillet slice and secure with a toothpick in the middle.
- Coat olive oil on the base of an oven proof dish and place fillet rolls in dish. Cook for 35 minutes. Serve 2-4 fillet rolls each or in a large serving plate.
