Easy meatloaf with roast potatoes

Meatloaf is an easy dinner to prepare and our version which has bacon and a nice tasty cheese will soon become a favourite of all.   What is great about this dish is it takes little time to prepare and once in the oven allows you time to fix things before dinner.  We recommend to rotate the potatoes every 15 minutes to crisp on all sides and prevent sticking.

Ingredients

  • 6 medium potatoes – peeled, rinsed, diced
  • 1 small onion – peeled, rinsed, diced finely
  • 1 garlic – peeled, rinsed, crushed
  • 1 cup tasty cheese – diced
  • 4 slices rind less bacon – diced
  • 500g / 17oz mince – topside or veal
  • 1 egg
  • 1/2 cup breadcrumbs
  • tablespoons olive oil
  • sprig rosemary
  • 2 tablespoons butter

Directions

  1. Preheat fan-forced oven to 180C / 356F.
  2. Prepare vegetables, cheese and bacon.
  3. Oil an oven proof dish.
  4. In a large bowl combine mince, vegetables, cheese, bacon, egg, breadcrumbs.  Mix well by combining with hands.
  5. Make a loaf by patting mixture into the measurements of approximately 22cm / 8.5in length, 8cm / 3in width and 5cm / 2in height and place this in the middle of the oven proof dish. 
  6. Place a sprig of rosemary and 1 tablespoon of butter on the top of the meatloaf.
  7. Add potatoes around the meatloaf and add 1/2 tablespoon of butter on each side of the pan.
  8. Place in oven for 60 minutes, rotate potatoes every 15 minutes. Cut meatloaf into 2cm / 1/2in slices and serve with potatoes.
