Goji & coconut bliss balls

A raw sweet that is packed with the Tibetan superfood the goji berry and the nutty flavour of sunflower kernels.  Coated in goji and coconut blend for an extra sweet touch.  It is a great alternative to a nut based bliss ball.

Ingredients

  • 10 dates – deseeded
  • 30 prunes – deseeded
  • 1/4 cup extra virgin coconut oil – melted
  • 1/2 cup dried goji berries
  • 1/4 cup desiccated coconut
  • 1 cup sunflower kernels
  • 1/4 cup desiccated coconut – extra for coating
  • 1/4 cup goji berries – extra for coating

Directions

  1. Remove seeds from dates and prunes.  Melt coconut oil in small pot on low heat.
  2. In a food processor or blender add all ingredients except extra goji berries and extra desiccated coconut.  Pulse eight times, then blend between 30-60 seconds to a breadcrumb consistency.
  3. Turn out into a medium mixing bowl and knead with hands.
  4. With a tablespoon lift a level amount and then roll the mixture into a ball using your hands and place on a plate. Repeat till all mixture is made into balls.
  5. In a food processor or blender add extra goji berries and extra desiccated coconut. Blend for 10 seconds.
  6. Place desiccated coconut goji berry mixture in a separate bowl or dish.  Roll balls to coat and place on freezer proof plates.  Repeat till all balls are coated.
  7. Place bliss balls in the freezer for 30 minutes.  Serve or store in an air tight container in freezer or fridge till required.
