Mushrooms in lemon marinade

Mushrooms in lemon marinade is a simple dish and a great accompaniment to most dishes, added to a salad, sandwiches or part of an array of vegetable dishes.  For best results marinate overnight to gain that fuller taste.

Ingredients

  • 10 medium cup mushrooms – washed, dried, sliced finely
  • 1/2 cup parsley – washed, sliced finely
  • 3/4 cup lemon juice – approximately 2 lemons
  • 1/2 cup extra virgin olive oil

Directions

  1. Prepare vegetables and juice the lemons.
  2. In a measuring cup add lemon juice, oil, parsley and mix.
  3. In a large serving bowl add the mushrooms and cover with marinade.  Mix well.
  4. Cover bowl and refrigerate for 3 hours or for best results overnight.  Serve.
