Roasted squash, zucchini & capsicum mix

This is a quick and easy dish to prepare to accompany many dishes.   It particularly works well when combined with main dishes that use the oven, so you can utilise the oven for the main and side.  Prepare and set the two dishes in the oven to synchronise to cook at the same end times.  This allows you to free up time to prepare a salad or do other activities while waiting.

Ingredients

  • 4 squash – washed, quartered
  • 4 zucchini – washed, halved, diced
  • 1 green capsicum – deseeded, washed, diced
  • 2 tablespoons olive oil

Directions

  1. Preheat fan-forced oven to 180C / 356F.
  2. Prepare the vegetables.
  3. In an oven proof baking dish add vegetables and coat with olive oil.
  4. Place dish into oven and roast for 40 minutes, mixing every 10-15 minutes.  Serve.
