Salami, tomato, basil & bocconcini

Typically this type of dish is served as an antipasto which is the starter for a meal.  We also like it served as a main with a variety of other dishes and salads.  Best to get the salami freshly sliced from a Deli.  As to what type of salami, we have not named any one in particular as it really is to taste.  If buying bocconcini loosely, make sure you get the liquid to cover to preserve them.

Ingredients

  • 4 medium tomatoes – washed, sliced top end discarded, each sliced into 4
  • 4 bocconcini – each sliced into 4
  • 16 basil leaves – washed, pat dry
  • 16 salami slices – round, thin-medium sliced
  • Olive oil – to drizzle

Directions

  1. Prepare tomatoes, bocconcini and basil.
  2. In a large round serving plate arrange 12 salami slices overlapping slightly around the plate. 
  3. Add 1 tomato slice on top of each salami slice.
  4. Add 1 basil leaf on top of each tomato.
  5. Add 1 bocconcini slice on top of each basil leaf.
  6. Repeat for the centre 4 slices.
  7. Drizzle a small amount of olive oil over the top of the bocconcini.  Serve.
