Salami & tomato marinade

This type of dish is usually served as a starter or as part of a few dishes which are served as an antipasto.  We also like to have this as part of a main with a variety of dishes.  You can choose your favourite salami and will present best with a round salami.

Ingredients

  • 2 tablespoons parsley – washed, sliced finely
  • 1 tablespoon basil – washed, sliced finely
  • 4 lemons – juiced
  • 3 tablespoons extra virgin olive oil
  • 10 round salami slices
  • 2 tomatoes – washed, sliced each in 5

Directions

  1. Prepare parsley, basil and juice the lemons.
  2. In a measuring cup add lemon juice, oil, parsley, basil and mix.
  3. In a large flat dish lay salami out. Pour marinade over salami, cover and refrigerate for 30 minutes.
  4. Prepare tomatoes.
  5. In a serving plate add one salami and a tomato on top, continue to add salami and tomato overlapping slightly to all are used. 
  6. Drizzle the remaining marinade over the dish.  Serve.
