Crispy crumbed pesto chicken

These chicken breast pieces are wrapped in bread crumbs, parsley and parmesan cheese. The chicken pieces are then baked in a hot oven which result in crispy parcels. Contrasting with the crispy chicken is the smooth tangy pesto.
Ingredients
- 2 breast fillets approximately 700g / 24oz – sliced into 8cm x 2cm / 3in x 3/4in
- 1 cup breadcrumbs
- 1/2 cup parmesan cheese – roughly grated
- 1/4 cup parsley – washed, sliced finely
- 1 egg – beaten
- 1/2 cup basil – washed
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 clove garlic – peeled, rinsed
Directions
- Preheat fan-forced oven to 220C / 428F.
- Prepare breast fillets, cheese and parsley.
- In a small bowl beat egg. In a second small bowl combine breadcrumbs, parmesan and parsley.
- Coat breast pieces alternating with egg and finish with breadcrumb mixture. Pressing breadcrumb mixture to chicken pieces to coat.
- Place chicken on an oven tray or oven proof dish and into oven baking for 15 minutes.
- Meantime, with a food processor or blender prepare pesto by blending basil leaves, oil, lemon juice and garlic.
- Serve 3-4 pieces of chicken on a plate and drizzle pesto on top. Serve.
