Rocket & baby spinach pesto salad

Lots of green power food with this salad.  Mixing the baby spinach with the rocket neutralises the taste of rocket.  Pesto and kalamata olives add an extra edge to the dish.

Ingredients

  • 2 cups rocket – washed
  • 2 cups baby spinach – washed
  • 16 seedless kalamata olives
  • 1/2 cup basil – washed
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic – peeled, rinsed, quartered 

Directions

  1. Prepare vegetables.
  2. With a food processor or blender prepare pesto by blending basil leaves, olive oil, lemon and garlic.
  3. Add rocket, baby spinach and olives to large serving bowl.
  4. Mix pesto through salad.  Serve.
