Super easy pumpkin soup

Most of us love the comforting taste of pumpkin soup.  This simple soup is easy and ready to eat within the hour.  Serve with your favourite type of bread for extra comfort and fullness.  Our selection is with Lebanese bread, herbs and olive oil toasted in a moderate oven for 5 minutes or until crispy.

Ingredients

  • 1 onion – peeled, rinsed, sliced finely
  • 6 cups butternut pumpkin – peeled, seeded, rinsed, diced
  • 2 tablespoons olive oil
  • 4 cups water

Directions

  1. Prepare the vegetables.
  2. In a large pot on medium heat add the olive oil.
  3. Add the onion cook for 2 minutes, stir occasionally.
  4. Add the pumpkin and cook for 10 minutes, stir frequently.
  5. Add water and bring to the boil on high heat.
  6. Reduce to low and simmer covered for a further 20 minutes. 
  7. In a food processor or blender blend and serve.
