Super easy 4 bean mix

This bean dish is super easy and quick to prepare. It is a great accompaniment to many meals. In particular we like it with a red meat dish and a nice green salad on the side. Toss this into the green salad for a bit of variety or store in the fridge for prolonged use.
Ingredients
- 400g / 14oz four bean mix – pictured butter, flageolet, chickpeas, red kidney beans or equivalent – rinsed and drained
- 1 tablespoon parsley – washed, finely sliced
- 1/4 spanish onion – peeled, rinsed, finely diced
- 1 tablespoon olive oil
Directions
- Prepare beans, parsley and onion.
- Add to a small bowl all ingredients.
- Combine all ingredients. Serve.
