Super easy 4 bean mix

This bean dish is super easy and quick to prepare.  It is a great accompaniment to many meals.  In particular we like it with a red meat dish and a nice green salad on the side. Toss this into the green salad for a bit of variety or store in the fridge for prolonged use.

Ingredients

  • 400g / 14oz four bean mix – pictured butter, flageolet, chickpeas, red kidney beans or equivalent – rinsed and drained
  • 1 tablespoon parsley – washed, finely sliced
  • 1/4 spanish onion – peeled, rinsed, finely diced
  • 1 tablespoon olive oil

Directions

  1. Prepare beans, parsley and onion.
  2. Add to a small bowl all ingredients.
  3. Combine all ingredients. Serve.
