Super easy rocket salad with honey

Rocket is not to everyone’s taste.  Some find it a bit bitter and the tang is just not worth the try.  Give it a chance and you may find that you grow to love this taste.  In our household we have a ¾ ratio of likes and with the addition of balsamic vinegar and honey the taste is fuller and sweetened.  We have used wild rocket in this salad but any rocket can be used.

Ingredients

  • 6 cups wild rocket – washed
  • 1 tablespoon honey
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil

Directions

  1. In a small container or cup whisk to combine honey, balsamic vinegar and olive oil.
  2. Add to a large salad bowl the wild rocket and dressing.
  3. Toss salad with dressing.  Serve.
