Chicken burgers with salsa & garlic chilli mayo

Chicken burgers are a quick and easy friendly meal.  With these chicken burgers you have a selection of fresh vegetables with the punch of a garlic chilli mayonnaise sauce.  For ease we have used premade mayonnaise and added a few ingredients to make a tasty topping to the burgers.  You can vary the sizing of the burgers with a single or double fillet.

Ingredients

  • 10 tablespoons mayonnaise
  • 4 tablespoons olive oil – for mayonnaise
  • 1 red chilli – washed, sliced finely
  • 1 garlic clove – peeled, rinsed, crushed
  • 1 red capsicum – washed, deseeded, diced
  • 1 tomato – washed, diced
  • 1 avocado – skins discarded, deseeded, diced
  • 1/2 lemon – juiced
  • 2 cups baby spinach – washed
  • 3 breast fillets– sliced thinly – approximately 10 – 12 fillets
  • 2 tablespoons olive oil – for fillets
  • 8 bread rolls 

Directions

  1. In a small bowl add the mayonnaise, 4 tablespoons of olive oil, add chilli and garlic.  Mix and set aside.
  2. Prepare the capsicum, tomato and avocado add to bowl and mix with lemon juice. Set aside.
  3. Prepare baby spinach and place in bowl. Set aside.
  4. Prepare chicken and in a bowl mix sliced chicken with 2 tablespoons of olive oil.
  5. Heat a griller on medium to high.  We used a griller press which cooks both sides at once. If you don’t have one use the oven grill or BBQ grill.  Place chicken on griller press for 2 minutes or adjust time depending on grill used. Place cooked fillets in a plate and cover.  Repeat until all slices are cooked.
  6. Cut bread rolls in half.  Place in a bowl.
  7. On a serving plate assemble bottom half of bread roll, 1-2 chicken fillets, 1 teaspoon of garlic chilli mayo, 2 tablespoons of salsa and 2 handfuls of baby spinach and close bread roll with top.  Repeat until all are made.  Serve.
    Alternatively add all bowls on table and everyone serves themselves.
