Chicken & bacon rolls

A simple dish which infuses the taste of bacon through the chicken to make it tender. Add this quick dish to any of your favourite vegetables and you have a low fuss meal. We have roasted vegetables as an accompaniment. Simply preparing the vegetables in small pieces and place into the oven 15 minutes ahead of the chicken.

Ingredients

  • 8 chicken thigh fillets
  • 8 slices short cut bacon – rind removed
  • 16 tooth picks
  • 1 tablespoon olive oil

Directions

  1. Preheat fan-forced oven to 180C / 356F.
  2. Prepare bacon.
  3. On the inside of the thigh fillet add one bacon slice.
  4. Cut each chicken thigh fillet in half, length wise.
  5. Gently roll each fillet slice and secure with a toothpick in the middle.
  6. Coat olive oil on the base of an oven proof dish and place fillet rolls in dish.  Cook for 35 minutes.  Serve 2-4 fillet rolls each or in a large serving plate.
