Delicious & easy chicken cutlets

For some reason these chicken morsels are a favourite of family and guests. They are really simple and really easy. The secret is the combination of low heat cooking with good portions of butter and olive oil for cooking.
Ingredients
- 2 chicken breast fillets – approximately 660g / 1.5lb – sliced thinly
- 2 eggs
- 1-2 cups breadcrumbs
- 100g / 3.5oz butter
- 5 tablespoons olive oil
Directions
- Slice breast fillets thinly.
- In a bowl beat eggs with a fork to combine.
- In another bowl add 1 cup breadcrumbs, topping up as required.
- Dip chicken fillet into egg and then breadcrumbs. Pack breadcrumbs densely on both sides.
- Place on a flat plate and repeat process till all fillets are crumbed.
- Place plate into fridge for 10 minutes.
- In a large frying pan on low, heat oil and half of the butter.
- When the butter sizzles add crumbed fillets into pan. Cook each side 2 minutes or until golden and cooked through. Remove and place on serving plate.
- Add remaining butter and repeat until all crumbed fillets are cooked. Serve.
