The humble cabbage gets a boost with the purple cabbage variety. Simple yet tasty with the addition of Dijon mustard. This dish is sure to brighten up your plate.
Ingredients
- 1/2 small purple cabbage – washed, sliced, diced roughly or grated
- 1 teaspoon Dijon mustard
- 1/2 lemon – juiced
- 2 tablespoons olive oil
Directions
- Prepare cabbage and add to a serving bowl.
- Mix mustard, lemon and oil in a small container and whisk.
- Add to cabbage to coat. Serve.
