Macadamia & almond nut bar

A healthy snack that combines macadamia, almonds, various seeds and dates. Easy and quick to make these can be stored for a number of days in the fridge.

Ingredients

  • 10 medjool dates – deseeded
  • 1/2 cup raw macadamia nuts
  • 3/4 cup almonds
  • 1/4 cup sunflower seeds
  • 2 tablespoons sesame seeds
  • 3 tablespoons coconut oil
  • 1 tablespoon maple syrup
  • 1 teaspoon olive oil

Directions

  1. Deseed the dates and in a small bowl cover the dates with water.  Soak for 5 minutes.
  2. In a food processor or blender add the macadamia and almond nuts.  Pulse 10 times to roughly chop nuts.  Add to a medium size bowl with seeds.
  3. Discard water from dates and add dates to a food processor or blender.  Blend to puree.
  4. In a small pot on low heat add the coconut oil, maple syrup and date puree mix well and allow to melt for approximately 3 minutes.
  5. Pour melted oil mix over nuts and seeds, mix well to cover all ingredients.
  6. Line a 20cm / 8in square baking tin with grease proof paper and grease with olive oil.
  7. Place all ingredients into tin pushing firmly and evenly down to cover the tin.   Place in the fridge for 90 minutes.
  8. Remove from fridge and cut into even slices. 
  9. Serve or store in airtight container in the fridge.
