Marinated chicken wingettes in honey & lemon

This all-time favourite is a definite crowd pleaser.  It is great for a meal, great for a finger food party and picnics.  It is versatile and also tastes good cold.  Use fresh bought chicken wingettes and marinate for a day or two for best results.

Ingredients

  • 30 wingettes – marinated
  • 1 cup honey
  • 1 cup lemon juice – approximately 6 lemons

Directions

  1. In measuring cup combine the honey and lemon juice.
  2. Place chicken wingettes in the base of an airtight container.
  3. Pour marinade over the chicken to cover.  Close the container and refrigerate for 1-2 days.
  4. Every half day or so, rotate chicken in marinade.
  5. On day and time of cooking, preheat fan-forced oven to 180C / 356F.
  6. Pour out marinade and leave only about a quarter of a cup marinade with the chicken.
  7. Place chicken and remaining marinade in an oven proof dish and cook for 20 minutes. 
  8. Remove from oven and turn chicken. Reduce the marinade by pouring out some to leave oven proof dish slightly covered with the juices.  Return chicken to oven for a further 20 minutes.
  9. Remove chicken from oven, place on a serving dish and serve.
